Homemade Tapioca Recipe

Always judge a bubble tea by its boba - great tapioca is soft but not mushy, firm but not hard, and chewy but not rubbery. Use our recipe to make our beloved homemade tapioca from scratch (Note: Our recipe only works on our premix tapioca powder). The instructions are in two parts - making the tapioca and cooking the tapioca.

Making the Tapioca
Serves 1-2 | Prep time 25 minutes

Ingredients:
3/8 cup of our premix tapioca powder (~50g)
1/8 cup of room temperature water (30g)
Cutting board
Knife
Mixing bowl

  1. In a mixing bowl, add 3/8 cup of tapioca powder and 1/8 cup of water.
  2. Knead to dough-texture. If the dough is dry, add a little bit water. The dough should feel like play-dough!
  3. Flatten the dough with your hands and sprinkle tapioca powder around the dough.
  4. Cut dough into long strips. Cut strips into small rectangular pieces and roll each piece into a pea-size ball.
  5. Complete all strips until you have a bowl of tapioca balls.
  6. Cook immediately or place in air sealed bag stored up to six months in the freezer.

Cooking the Tapioca
Serves 1-2 | Cook time 35 minutes

Ingredients:

1/2 cup  homemade tapioca balls (~80g)
18 oz water (532mL)
1/4 cup brown sugar (~40g)
1/4 cup hot water (60mL)
Cooking pot
Stove
Bowl

  1. Fill the pot with 18 oz water and cook on high until the water is boiling.
  2. Pour in the homemade tapioca balls.
  3. Keep stirring until all of the tapioca balls float to the top (about 1-2 minute).
  4. Reduce heat to medium-low and cook for 8 minutes (stirring occasionally).
  5. Turn off the stove. Cover with lid and let it cool for another 8 minutes.
  6. While waiting, make the brown sugar syrup by mixing equal parts brown sugar and hot water. Set aside in a bowl.
  7. After 8 minutes have passed, rinse cooked tapioca balls under cold running water.
  8. Pour tapioca in brown sugar syrup and stir to avoid clumping.
  9. Let it soak for at least 10 minutes. 
  10. Serve immediately and enjoy! Tapioca tastes best when consumed within 2 hours.
